The first of our Black Box coffees is an exotic produced by Jairo Arcila on the Santa Monica farm, imported by Cofinet. This exclusive white wine fermentation is part of Black Box’s innovative range of specialty coffee showcased by experimental processes, microlots and exotics. This coffee was grown by Jairo Arcila at the Santa Monica farm in the Armenia region of Colombia. The lot was exposed to a dry aerobic fermentation for 30 hours, then placed on raised beds until 20% moisture was achieved. The coffee was then placed into Grainpro bags for 80 hours where the fermentation process was led by a natural yeast. On completion of the 80 hours, the coffee was removed from the Grainpro bags and further dried to achieve the desired moisture content.
