This exotic coffee was grown by Rafael Amaya at the farm La Virginia. This
lot was exposed to a dry anaerobic fermentation of 48 hours inside
Grainpro bags. Then the coffee was exposed to 24 hours of aerobic
fermentation. Next, the coffee was placed back inside Grainpro bags
for another 48 hours. Finally, the coffee was gently washed and placed
on raised beds below 35ºC until ideal moisture content was achieved.
As a filter, the coffee boasts sweet yellow fruits, a mild acidity and clean mouthfeel. The espresso roast highlights the deep unrefined sugars of this coffee, bringing a smooth milk chocolate to the pallet.
This microlot is 100% Yellow Bourbon. This varietal is a natural
mutation of the Coffee Arabigo. The name Bourbon was given after an
island now called Reunion, off the coast of Madagascar.
