Producer: Las Nubes

As you’d expect from a coffee that proudly carries the owner’s name, Don Victor represents the pinnacle of quality from the Las Nubes family. Harvested exclusively by the farm’s most skilled pickers at Finca Santa Maria, each cherry is hand-selected one by one to ensure only the ripest, most exceptional fruit makes the cut.

Once picked, the cherries are transported straight to the farm’s wet mill, where they undergo carefully controlled depulping, fermentation, and washing. The parchment coffee is then dried slowly for 10 days on African raised beds under shade, allowing flavours to develop gently and evenly. During drying, a second round of meticulous hand-sorting removes any defects, ensuring a cup that’s as clean as it is expressive.

After drying, the beans rest in GrainPro bags before final preparation at Grupo Las Nubes’ renowned dry mill, where industry-leading standards of cleanliness and precision preserve the coffee’s character at every stage.

This washed Java varietal shines with a beautifully delicate floral character, leading with elderflower aromatics. A juicy sweetness of white grape follows, finishing with a crisp, refreshing pear-like clarity. Elegant, bright, and effortlessly refined.
