Oropéndulas is a collective coffee produced by seven small farms in the mountainous region of El Paraíso, Honduras. Led and processed by veteran producer Moisés Sosa, this lot reflects generations of local knowledge, with farms relying on community labour and traditional growing practices passed down over time.

Sitting at altitudes of up to 2,000 metres, the farms grow varieties including Parainema, IHCAFE 90, and Lempira. Cherries are carefully processed at Moisés’ beneficio, where the coffee is fully washed, fermented for 24 hours, and then sun-dried on patios and raised beds. This approach preserves clarity and structure, resulting in a cup that’s clean, balanced, and true to the region.

Honduras is unique among coffee-producing countries, having seen the most significant growth in export volume following the rise of the specialty coffee industry. Quality-led production is now the norm, with coffee grown across six recognised regions, including El Paraíso, and cultivated predominantly by small and medium-sized farms.

Today, over 90% of Honduran coffee is washed and sun-dried, with the majority grown at high altitude — conditions that consistently deliver bright acidity and excellent sweetness. Oropéndulas is a classic expression of this tradition: honest, well-processed, and deeply rooted in Honduran smallholder coffee culture.
