This is a beautifully balanced coffee with a delicate acidity, a creamy body and a sweet aftertaste.

A third-generation farmer from the mountains of San Sebastián in Comayagua, Josué Ariel Fúnez has spent his life around coffee. This washed Catuaí was grown at 1,650 metres above sea level, then dried slowly on solar beds and nylon to build sweetness and clarity in the cup.

Across the 2025–2026 harvest, Josué transformed the farm into a true specialty operation; regulating canopy, renovating his wet mill, and refining his processing to draw the most from every lot. It hasn't come easily: to protect quality through heavy rains, he moved his coffee to drier ground and built housing to keep his harvest team close.

With his sights now set on Cup of Excellence, this is coffee shaped by genuine care and experience. Expect notes of caramel and fruit, a delicate acidity, creamy body, and a sweet, lingering finish.

To ensure peak flavour and aroma, we roast in small batches multiple times per week at our local roastery. Every bag is shipped shortly after roasting, ensuring you receive it at the optimal point for degassing and brewing. We recommend resting your coffee for 5–7 days from the roast date to allow the flavours to fully develop before brewing.

Keep your coffee in its original valved bag, stored in a cool, dark, and dry place. Avoid the fridge or freezer, as moisture can damage the delicate oils and flavor profiles of the beans.
