Miraflores began in 2002, when Manuel Rojas and Esther Requejo set out to grow coffee sustainably on more than 100 hectares in Peru's Amazonas region, chosen for its altitude and soil. They first established Typica, later laying out a plan to plant unique specialty varieties by elevation, each matched to the ground that suited it best. This Bourbon is grown at 1850m.

Ripe cherries are selected at 18–23° Brix and held in water for 12 hours before washing and floating. Pulped beans then ferment anaerobically underwater for 72 hours in valve-sealed GrainPro bags, before a final wash and slow drying in solar parabolic dryers for up to 25 days. A final hand-sort follows before shipment.
