We've paired Costa Rica, La Pastora with Colombia, Popayan Sugarcane Decaf in a 50/50 split, so you get the full flavour of two coffees we already love with roughly half the caffeine of a standard cup.

La Pastora brings the top end with it's signature bright acidity, ripe peach, and a honeyed sweetness that comes from meticulous washed processing at 1,200 to 1,800 metres. The Popayan Decaf does the heavy lifting underneath: sugarcane decaffeination strips the caffeine while leaving the sweetness intact, giving us red fruit, chocolate, and a body that holds up in milk.

To ensure peak flavour and aroma, we roast in small batches multiple times per week at our local roastery. Every bag is shipped shortly after roasting, ensuring you receive it at the optimal point for degassing and brewing. We recommend resting your coffee for 5–7 days from the roast date to allow the flavours to fully develop before brewing.

Keep your coffee in its original valved bag, stored in a cool, dark, and dry place. Avoid the fridge or freezer, as moisture can damage the delicate oils and flavor profiles of the beans.
